Donating an organ is an act of love so the answer is undoubtedly yes.
Christ gave his life for us and we are instructed:
1 John 3:16 Hereby perceive we the love of God, because he laid down his life for us: and we ought to lay down our lives for the brethren.
Being buried without our organs will not affect God’s ability to resurrect us from the dead. If we are buried complete, all our organs corrupt and return to the chemical elements from which we are constructed. Resurrection is a complete reconstitution from scratch so to speak. This is the import of Christ’s words:
Matthew 10:30 But the very hairs of your head are all numbered.
We can have the confidence that Job had that though our body is consumed in the grave we will be raised as ourselves.
Job 19:25 For I know that my redeemer liveth, and that he shall stand at the latter day upon the earth: 26 And though after my skin worms destroy this body, yet in my flesh shall I see God: 27 Whom I shall see for myself, and mine eyes shall behold, and not another; though my reins be consumed within me.
