In the Gospel, how do we have the conversation between Pilate and Jesus?

How did their conversation end up in the New Testament when there was no one about to hear them? The Apostles were not present and niether anyone else.

Jesus was there. Jesus was raised from the dead and taught the disciples for 40 days after his crucifixion andprior to his ascension. Your question seems to be based on the supposition that Jesus died and that was the end of him. It wasn't.

Also, you are forgetting that the gospels were inspired byGod. See 2Peter 1:19-21. So, even if Pilate had been muttering words to himself with no one elsepresent, we still could have known about it through the inspiration of the Gospel writers by the Holy Spirit of God.
